WHAT TO LOOK FOR WHEN PURCHASING FRESH SEAFOOD

SELECTION

Whole Fish
Bright and lustrous eyes, skin or scales
Firm flesh that springs back when touched
bright pink-red gills
Pleasant fresh sea smell

Fillets and Cutlets
Flesh should be bright, lustrous and firm
Any dark muscle should be pink-red colour
Pleasant fresh sea smell
No discolouration, gaping or bruising

Crustaceans and Molluscs
Brightly coloured, lustrous shells or flesh
Firm and intact shells, heads, tentacles or flesh
Shells closed or closes when tapped or squeezed
Pleasant fresh sea smell
No discolouration, particularly at joints

STORAGE & HANDLING

Storing Fresh Seafood
Keep your fresh seafood cool (0 to 5°C).
When you get it home, remove the packaging and place it in a baking
dish or similar.
Cover with plastic wrap & put it in the fridge.
Ideally, cook and eat within 2 days of purchase.

Storing Frozen Seafood
If you wish to store your seafood for longer:
Wrap and seal the seafood securely in a plastic freezer bag.
Lay it flat to ensure it freezes evenly.
Label the package with the date of purchase and the date of freezing.
Do not refreeze once thawed.
For best results, thaw naturally in fridge section over night.
